I will always remember the first time I ever had bruschetta. It was at a restaurant in East Brunswick, New Jersey. My grandfather had just passed away and my family needed to get some food before the funeral so we stopped at a local diner.
Jersey always had the best diners, I grew up in many different neighborhoods throughout Jersey but each and every one of them had a great family diner. So when we return for family functions, eating as much New Jersey food as we can while there is always at the top of our to-do list. Usually, we consume a lot of Italian food when we go back home so this was the perfect addition to our must-eat while in New Jersey foods list.
So on this occasion, we were a little out of sorts due to the circumstances that brought us to the area. So we just stopped at a random diner and took our chances with the food. I had no idea when selecting this place that it would be remembered by us all as that diner with the best bruschetta we had ever tasted. The funny thing is that we didn’t even order it. The waitress just showed up with a platter of bruschetta and said we just made this fresh in the back, enjoy.
Now thinking back on the occasion I remember that we were all dressed in black, my mom was really upset, and there were a lot of us sitting at a large table. I am guessing that the staff noticed the somber occasion and offered the best bruschetta in the world as a friendly gesture.
No matter how this delicious appetizer came into our lives, I couldn’t stop thinking about it over the years. So I decided to take advantage of my tomato garden and use up some of the Roma tomatoes to make my very own bruschetta recipe.

Fortunately, you can make a tasty dish without a garden, most grocery stores have a good selection of Roma tomatoes, fresh garlic, and basil available. All of these ingredients come together to create a mouth-watering bruschetta that is perfect for any occasion.

Easy Bruschetta Recipe
Ingredients
- 8 Diced Roma Tomatoes
- 1 Tablespoon Extra Virgin Olive Oil
- 4 Tablespoons of Chopped Fresh Basil
- 1/3 Cup of Grated Parmesan Cheese
- 2 Cloves Diced Garlic
- 1 Tablespoon of Balsamic Vinegar
- 1/4 Teaspoon of Salt
- 1/4 Teaspoon of Black Pepper
- 4 Tablespoons of Extra Virgin Olive Oil for Spreading on Bread
- 1 Baguette
Instructions
Preheat oven to 400 degrees and slice baguette into small pieces. Brush each piece with olive oil on both sides. Bake for 7-10 minutes, flipping halfway through the cooking process to ensure both sides become golden brown.
Mix the wet ingredients in a bowl and scoop them onto the bread when finished baking. Serve and enjoy.
