Pancake Batter Crepes Ingredients
Pancake mix– I use a variety of pancake mixes from American pancakes to Aunt Jemima pancake mix, so whichever box of pancake mix you have on hand will work.
I have even used a waffle mix but keep in mind that leavening agent-based waffles tend to be thicker and fluffier, while crepes made from pancake mix are notably thin and delicate.
Milk– For best results, use whole milk but if you only have almond milk on hand you can use one cup of milk, and a little butter.
Melted butter works best. Let the batter rest to get a good idea of the consistency of the batter before adding in more liquids.
Egg– I usually use one large egg but have used jumbo eggs with similar results.
Vanilla extract- This ingredient can be skipped for savory crepes.
If you plan on filling the cooked crepe with a bruschetta filling, or some other savory ingredients, add in a pinch of salt for flavor.
Nonstick Spray– You can use any non stick cooking spray you choose, a nonstick skillet isn’t usually good enough to protect the bottom of your pan.
Even with a non-stick pan the first side of the crepe usually sticks and the second side will crumble.
For the best-looking finished crepes, I suggest spraying an olive oil-based spray on the frying pan before adding a cup of the crepe batter.
