I think my favorite tomato recipe is this Cherry Tomato Bruschetta! It’s my go-to dish for a brunch, or cookout party, or any time I need Summer appetizers that are super easy to put together. It also works as a side dish for quick weeknight meals or even an easy lunch.

Plus, it’s ready in just 15 minutes!

I love to use tomatoes from my garden to make a variety of recipes so when I had an abundance of this variety I was inspired to make bruschetta using cherry tomatoes. Not only are they plentiful this time of year but they bring a delicious burst of flavor and texture to a variety of dishes.

  • 3/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 teaspoon olive oil, plus extra for drizzling
  • 4 slices of sourdough bread

Instructions:

1. Preheat your oven to 400°F (200°C). Arrange the sourdough slices on a baking sheet.

2. Prepare the Bruschetta Topping: In a mixing bowl, combine the quartered cherry tomatoes, minced garlic, dried basil, salt, pepper, and olive oil. Stir well to combine and set aside to let the flavors meld.
